A hand harvest in the heart of autumn
Our apples are picked by hand, in our Normandy orchards, at full ripeness, when the fruit comes away on its own into the palm of the hand. That precise moment of harvest is no accident: it's when the apple has concentrated all its sugar and its scent, and gives up the best of its flavour, clean and generous.
Entirely artisanal know-how
Every jar is made in our kitchen, entirely by hand. No industrial line, no automated process: only the gesture, the patience and respect for the produce. The apples are cut with their skin and pips, naturally rich in pectin, cooked slowly, then the juice drips of its own accord through a muslin cloth, never pressed, to keep only the clearest part. As in the old days, in small quantities, to guarantee consistent quality and authentic flavours.
The marriage of flavours
The fruity, faintly tangy sweetness of the apple unfolds in an amber jelly, translucent and bright. We add one precious touch: fresh ginger, grated and infused during the cooking, for its lemony warmth and lively bite that awaken the fruit and lengthen the finish. Nothing else: no colouring, no added flavouring.
Serving ideas
Enjoy it on a slice of fresh bread or a warm brioche, spooned over plain yoghurt or fromage blanc, alongside a camembert or a hard cheese, to glaze a roast pork or poultry, or to liven up your tarts and pastries.
