Beef Broth

A hand harvest in the kitchen garden

Our carrots, leeks, onions and garlic are picked by hand in the kitchen garden, once they have taken on all their flavour; the thyme and bay are cut in the garden the same day. That precise moment of harvest is no accident: it's when the vegetables are at their sweetest and the herbs at their most fragrant, ready to give the best of themselves to the broth.

Entirely artisanal know-how

Every jar is prepared in our kitchen, entirely by hand. No industrial line, no automated process: only the gesture, the patience and respect for the produce. The Normandy beef and its bones simmer for long hours at a gentle shiver with the vegetables and herbs, skimmed by ladle, then the broth is strained through a muslin cloth to keep only the clearest part. As in the old days, in small quantities, to guarantee consistent quality and authentic flavours.

The marriage of flavours

The depth of the beef meets the sweetness of carrots, leek and onion, for an amber broth, round and generous. We add three precious touches: fresh ginger, for its lemony warmth that awakens and lightens the whole; black pepper and garlic, for relief and length on the palate; and the bouquet of bay and thyme, for its woody, aromatic notes, the signature of old-fashioned broths. No flavour enhancer, no added flavouring.

Serving ideas

Drink it piping hot from a cup, on its own or with a few vermicelli, use it as a base for soups and velvety purées, to moisten a risotto, a pot-au-feu or a blanquette, to cook vegetables, rice and grains, or to deglaze a pan and build a sauce or a meat jus.
